Need a spooky idea for Halloween dinner? Have I got the recipe for you!! Not only is it spooky, but it is unBOOlievably easy to make, and it’s healthy…the calm before the sugar-overdosing-storm!
My little jack-o-lanterns are stuffed with protein, but the best part is…you can basically stuff them with whatever the heck you please! You might have to run out and grab some orange bell’s real quick…but I’ll bet you have stuff for the inside already.
Get creative. You could stuff them with macaroni, spaghetti, quinoa, brown rice, turkey, beef, all veggies, cheese… Ask your pallet, check your fridge and cupboards and let’s ghost – ahem, GO!
I made these with 3 simple ingredients (and a few spices)…
-6 Orange Bell Peppers
-Grass fed ground beef (I didn’t measure…but I made plenty so I have leftovers already cooked up for when I need it!)
-Shredded Mozzarella cheese (a few handfuls)
Here’s what I did…
1. First I browned the ground beef on the stove top. (While it was cooking, I added some Himalayan pink salt, crushed red pepper, and lots of minced garlic. I would have added fresh chopped onion if I had some.)
2. Preheat oven to 400 degrees.
3. Wash bell peppers, cut off tops and set aside. Clean out ribs and seeds from inside and discard.
4. Using a sharp knife, cut out the faces on your jack-o-lantern.
5. When beef is browned, drain grease and add Mozzarella cheese to beef, mix well.
6. Stuff bell peppers with beef mixture, top with more Mozzarella cheese and put the bell pepper top back on.
7. Place bell peppers on a cookie sheet close together (so they support each other and don’t tip while transporting from counter top to oven – 2 of mine tipped before I smooshed them all together)
8. Cook for about 20-30 minutes or until bell peppers start to slightly brown.
9. Serve and ENJOY!
