Low Carb Pumpkin Cheesecake Bites

It's PUMPKIN season y'all!!
I really think if you guys give these a try, you're going to absolutely love them! They are a perfect mixture of sweet, rich & creamy, holiday flavor, pumpkin-y goodness and are SO delicious!! They are low carb, no bake, and only call for 4 ingredients! They are keto diet friendly and only take about 5 minutes to make! WHAAAT!!!! Eating a few of these puppies is an easy way to squeeze those extra fats into your macros. Ladies and gentlemen.... Low Carb Pumpkin Cheesecake Bites!! You have GOT to try these! I don't know about you, but I love a quick and easy recipe, and even more so when they're delicious and my family loves them! The only problem is, once I start... I cannot stop!

I'm stocking up on canned pumpkin this Fall because I will be making these bad boys ALL.YEAR.LONG.

Ingredients:
1 cup of Libbys 100% Pure Pumpkin
10 oz. cream cheese softened
4 oz of Organic Unrefined Coconut Oil or grass fed butter softened
1/4 cup of Stevia

Directions:

1. In a mixing bowl, beat the cream cheese & butter until well combined. (If the cream cheese and butter are not softened, you can microwave for a few seconds at a time until they are soft. Don't let the butter melt completely though, it turns out best when just softened)
2. Add the Stevia and Pumpkin to the cream cheese/butter and beat until well combined.
3. Spoon into cupcake liners (I put them in cupcake liners and then put them all side by side on a cookie sheet. It holds wayyyy more than a cupcake tin does!)
4. Place the cookie sheet in the freezer for about 45 minutes (or longer if you want them frozen solid). But 45 minutes works perfect for me. I can't wait much longer than that! Once frozen, you can remove them from the cupcake liners and place in Tupperware and freeze. (Ours never seem to last longer than one day so I'm not sure how long they last). It makes about 20-25 cheesecake bites depending on how big your spoonful is! Enjoy...and if you try them, let me know what you think!!
