Busy Morning, Freezable, Healthy, Breakfast Bites

You have got to be kidding me. How can Summer be over already!?!? Didn’t it just start? Our little community starts back to school TODAY!! Already! And as everyone gets back into their busy morning routines, I thought I would share a quick and easy breakfast idea for those crazy busy mornings when everyone is rushing around and cereal or pop tarts just wont cut it.

I love these little “muffins” because they are packed with healthy, nourishing ingredients that I am happy to feed to my family. They are a great protein source, a perfect way to sneak in extra veggies, and just an all around amazing, stress free way to start the morning! Did I mention they are super easy to make and they freeze well to make ahead of time in bulk? Just take some out the night before to thaw in the fridge, then heat them up before school/work. You’re going to love this!

Another thing that I love about these little beauties is that there is no wrong way to make them. You can basically add whatever you have on hand to them. Picky eaters? No problem… It’s so easy to make a variety according to your families preferences without adding more time in the kitchen. My boys love helping me make these by cutting up the veggies they want in their muffins.

Here’s how I made these ones…

First I greased the muffin tins with COCONUT OIL. Then I pressed pieces of cooked yams into the bottom of each muffin tin and baked for 15 minutes at 425.

Reduce heat to 350. Then add chopped onions and tomatoes. Scramble up about 10-12 eggs, add salt and pepper and pour over veggies.

(I added some leftover seasoned ground beef on top of some of them) and bake additional 18-20 minutes or until golden brown on top. You can add whatever veggies your little heart desires. You could also add cheese or hash brown style potatoes. The sky is the limit. Instead of ground beef you could add bacon or sausage. Your protein, carbs and veggies all together in one delicious “muffin”. NOTE: I have found that it’s best to leave a little extra room on top so the egg doesn’t spill over into your oven. 🙂
