Healthy dessert recipes are one of my all time favorite things. I mean, if I can take something that looks like a big ol’ hunk of sweet junkiness and make it into a delicious healthy treat for myself…AHEM…I mean, my family, I am one happy momma!! And if the recipe contains CHOCOLATE, PEANUT BUTTER & PROTEIN, it’s like a dream.
I have gotten great feedback over the years on these Peanut Butter Protein Cups and just like many of my other RECIPES, these are one of my family’s favorites! I think you’re going to love them also!
These pb cups are loaded with good for you ingredients that you will feel great feeding to your family (that is…if there’s any left to share when you get done with them) 😉 They are a perfect healthy snack loaded with protein and healthy fats. I seriously need to start adding these to my meal prep routine so they’re ready each week when I want something sweet! They are a peanut butter cup that is always welcome in my home!
Two of my favorite things about this recipe besides the fact that they are unbelievably DELISH is that they are EASY STINKIN’ PEASY to make and require very few ingredients!! My kind of recipe, as you probably already know! 🙂
Ladies and Gentlemen… let me introduce to you, my Homemade Healthy Peanut Butter Protein Cups!
Ingredients:
1 cup of CREAMY PEANUT BUTTER
1 scoop of vanilla LEAN BODY FOR HER 100% WHEY PROTEIN
1/2 cup of melted ORGANIC COCONUT OIL
2 tbsp. of local honey
1 tsp. of ORGANIC VANILLA EXTRACT
1/3 cup of well chopped WALNUTS
4 squares of UNSWEETENED BAKING CHOCOLATE
2 tbsp. of coconut oil
3 tbsp. of local honey
Directions:
In a large bowl, combine first 6 ingredients and mix until well combined. Fill cupcake paper cups with a spoonful or two of peanut butter mixture. This made 12 Peanut Butter cups for me. (I put the cupcake holders in a muffin tin so they held their shape). Then stick the muffin tin in the freezer.
Take the 4 squares of unsweetened baking chocolate and put in a microwave safe bowl. Microwave for 1 minute, then remove from microwave and stir. Microwave for an additional minute but keep an eye on it. If it is already melted, don’t microwave the full minute. When fully melted, remove from microwave, stir in coconut oil and honey. Take the muffin tin out of the freezer and drop little spoonfuls of chocolate on each peanut butter protein cup. My chocolate was a little overly melted and wasn’t very “liquidy” so I had to sort of press the chocolate all over the tops of the peanut butter cups. It worked out nicely and wasn’t messy at all.
Place the muffin tin back in the freezer and freeze for about 30 minutes. Store in tupperware in the fridge or freezer (I prefer the freezer). Let me know how you like them!!
