Here’s a fun and clean breakfast idea that I love making for my family, especially for my boys… they LOVE these little things!! But so do hubby and I. They’re a perfect combination of sweet, moist and fluffy, pancake-y goodness that go perfect with a hot cup of coffee. They’ve got your protein, healthy carbs, and healthy fats and are a scrumptious way to start the day!
Mini Pancake Cups filled with Homemade Strawberry Jam!
OH! And don’t let me forget to mention that they’re EASY and HEALTHY!! My favorite kind of recipe!!
Pancake Cups:
1 cup Unsweetened Almond Milk
6 whole eggs
1 cup of oat flour (I just blend 1 cup of Whole Oats in my NutriBullet
1/2 tsp. Himalayan Pink Salt
3 tbsp. Stevia
1/4 cup melted Organic Unrefined Coconut Oil
Preheat oven to 400. First start by blending your oats in a NutriBullet or blender until it has the consistency of flour. Then add the remaining five ingredients and blend until completely combined.
Grease cupcake pan well (I used coconut oil and a paper towel 😉 ) and distribute evenly into each tin. I measured out about 1/4 cup for each and it made 18 Mini Pancake Cups! Bake for 15 minutes or until fluffy and golden on top. While they are baking, I quickly whip up my homemade strawberry jam.
Homemade Strawberry Jam:
2 16 oz. packages of fresh strawberries
1/4 cup Stevia
1/2 cup Flax Seeds
1 tbsp honey (I use local honey)
Wash strawberries well, cut off the tops and cut into smalls pieces. In a large bowl, mash the strawberries with a whisk or potato masher until your desired consistency. Add remaining ingredients and mix well.
Top your pancake cups with your Homemade Strawberry Jam, sprinkle with Stevia and SERVE before you find yourself eating all.the.food! <3
