Pumpkin Protein Pancakes

Good morning, friends! Y'all are going to love this yummy fall breakfast idea... Pumpkin Protein Pancakes!! They're so stinkin' quick and easy (OH and healthy too). They are a delicious way to start the day (or finish off the day - breakfast for din din). They're even handy to eat on the go, and are the perfect combo of sweet and moistness that doesn't need syrup or anything to doctor them up, if you know what I'm saying. 🙂

Ingredients:
5 egg whites
1/4 cup dry Whole Oats
1/2 cup Libbys 100% Pure Pumpkin
1/4 cup Stevia

I like to make things simple, as you can probably tell...so I just put all the ingredients in a cup and mix it well with a fork (you can also throw all the ingredients into a NutriBullet or blender and blend until smooth), then pour into a Organic Unrefined Coconut Oil greased pan on MEDIUM heat. Cover and keep an eye on it, (you want to make sure the egg is cooked through without burning it,) and wait until the egg isn't runny on top before flipping... sizzle, flip, sprinkle with a little cinnamon and ENJOY!

I make these for my husband to take to work as his meals sometimes. I just cut them into 4 quarters and he eats them kinda like a quesadilla. 🙂 They have your protein and carbs and are quick and easy on the go! My family loves them, I hope yours does too!!
