Omgosh you guys! These are AH-mazing!! So amazing that I recently made them 5 days in a row!! Low carb! No bake! Only 4 ingredients! Keto diet friendly! They only take about 5 minutes to make! Easy way to squeeze those extra fats into your macros. Ladies and gentlemen.... Low Carb Lemon Cheesecake Bites!! You have GOT to try these! I love quick and easy recipes, and a huge plus when they're delicious! The only problem is that once I start... I cannot stop! These are going to be a regular treat in the Smith household!!
Ingredients:
1 large lemon
10 oz. cream cheese softened
4 oz of coconut oil or grass fed butter softened
1/4 cup of stevia
Directions:
1. In a mixing bowl, beat the cream cheese & butter until well combined. (If the cream cheese and butter are not softened, you can microwave for a few seconds at a time until they are soft. Don't let the butter melt completely though, it turns out best when just softened)
2. Wash the lemon and cut into quarters, then carefully slice the peel off of each quarter. Set the peels aside to use as a garnish (if you want). Discard any seeds, and then put the insides of the lemon into a blender or nutri-bullet and blend until it turns to liquid.
3. Add the stevia to the lemon and mix well.
4. Add the lemon mixture to the cream cheese/butter and beat until well combined.
5. Spoon into cupcake liners (I put them in cupcake liners and then put them all side by side on a cookie sheet. It holds wayyyy more than a cupcake tin does!)
6. Place the cookie sheet in the freezer for about 30 minutes (or longer if you want them frozen solid). But 30 minutes works perfect for me. I can't wait much longer than that! Once frozen, you can remove them from the cupcake liners and place in Tupperware and freeze. (Ours never seem to last longer than one day so I'm not sure how long they last). It makes about 25-35 cheesecake bites depending on how big your spoonful is! Enjoy...and if you try them, let me know what you think!!
